15-Minute Shrimp Spring Roll Bowls

Ingredients

1/2 pound large shrimp, peeled and deveined
1/4 cup vegetable oil
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 tablespoon soy sauce
1 tablespoon honey
2 cups mixed greens
1 cup sliced red bell peppers
4 large spring roll wrappers

Directions

In a blender or food processor, combine oil, garlic, and ginger. Blend until smooth.
