A Few Things to Know

  • For the shredded chicken, I recommend my super easy 3-ingredient crock pot shredded chicken breast or my simple Instant Pot shredded chicken. You can also use shredded rotisserie chicken and toss it with 1/2 cup salsa and about 2 tablespoons of chicken taco seasoning, which is usually made with cumin, chili powder, garlic powder, onion powder, oregano, and paprika.
  • Regular-size corn tortillas also work well in this recipe. I love the street taco size because they're adorable and easy to hold, but standard corn tortillas are just fine.
  • The tacos are ready when the shells are crisp on the outside and the cheesy chicken filling is warmed through on the inside.

If I'm in a hurry, I actually use the air fryer more often than the oven because these tacos take a little less time to cook.

  • Set the air fryer to 400°F.
  • Follow the same recipe instructions and place the filled tortillas in the air fryer in a single layer; cook for 2 minutes.
  • Carefully fold each taco in half, then cook for another 5–8 minutes, flipping halfway so both sides get crispy.

Stove Top Method

Prefer the stovetop? You can also crisp up these chicken tacos in a large skillet.

  • Warm a large skillet over medium heat.
  • Add a little oil to the pan, or spray the tortillas with cooking spray.
  • Fill each tortilla with cheese and the chicken mixture.
  • Fold each taco in half and cook for about 3–4 minutes per side, until crispy.
