Creamy Tomato & Spinach Pasta

Ingredients

One pound of penne pasta

2 tablespoons of olive oil

2 cups of cherry tomatoes, sliced

2 cloves garlic, minced

1 cup of heavy cream

1 cup of fresh spinach, chopped

Salt and pepper, to taste

1 cup of grated Parmesan cheese

Bring a large pot of salted water to a boil. Add 12 ounces of the penne pasta, return to a boil, then reduce the heat to a simmer for 9 minutes.

In a large skillet, heat 2 tablespoons of olive oil over medium low heat. Then add the sliced tomatoes, and sauté until they start to release their juices.

Stir in the minced garlic & then, once fragrant after 30 seconds, add in the heavy cream, and reduce by half, stirring the entire time.

Add the cooked pasta to the skillet and toss it in the creamy sauce until well combined.
