Brown Rice Chicken Burrito Bowls

Ingredients

1 lb boneless, skinless chicken breasts
2 cups cooked brown rice
1 can (14.5 oz) diced tomatoes, drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
2 tbsp cumin
1 tsp smoked paprika
1 tsp salt
1/4 tsp black pepper

Directions

In a large bowl, whisk together cumin, smoked paprika, salt, and black pepper. Add the chicken and toss to coat.

Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and set aside.

Heat the remaining 1 tablespoon of oil in the skillet over medium heat. Add the diced tomatoes and cook, stirring occasionally, until lightly caramelized, about 5 minutes.

Add the cooked brown rice, corn kernels, and cooked chicken back into the skillet. Stir in the cilantro and cooked to combine.
