Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 cups cooked brown rice
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Instructions

In a large skillet, heat oil over medium-high heat. Add the chicken and cook until browned, about 5-6 minutes.
