1 1/2 pounds potatoes, peeled and diced
1 onion, diced
2 cloves garlic, minced
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 tablespoon olive oil
Salt and pepper, to taste
8-10 corn tortillas
Instructions

Boil the diced potatoes in salted water until tender, about 5-7 minutes. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
