Brown ground beef in a skillet over medium-high heat for 5-7 minutes, breaking into small pieces as it cooks. Drain excess fat and set aside.

In a separate skillet, heat 2 tbsp of olive oil over medium heat. Add diced potatoes and cook for 5-7 minutes, or until tender. Season with cumin and Mexican seasoning.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Fill each tortilla with browned ground beef, cooked potatoes, shredded cheese, lettuce, diced tomatoes, and a sprinkle of additional cheese.

Top each burrito with a dollop of sour cream and a sprinkle of cilantro. Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the burrito into a neat cylinder.

Cook the burritos in a dry skillet over medium heat, turning occasionally, until the cheese is melted and the tortillas are crispy, about 5-7 minutes per side.
