CHEESY POTATO BURRITOS – Simple & Delicious

Ingredients
4 large flour tortillas
2 large baking potatoes, peeled and diced
1 large onion, diced
1 pound seasoned ground beef
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup chopped fresh cilantro
1 teaspoon chili powder

Preheat oven to 400°F. Wrap tortillas in foil and bake for 5 minutes to warm.

Boil potatoes in salted water until tender. Drain and set aside.

Cook ground beef in a skillet until browned, breaking into small pieces.

Return potatoes to pot and stir in chili powder and a pinch of salt. Assemble burritos with the warmed tortillas, beef mixture, cheese, and potatoes.
