Chicken And Rice – Easy Comfort Food

Ingredients

2 cups uncooked white or brown rice

1 lb boneless, skinless chicken breast or thighs

2 cups chicken broth, warmed

2 tbsp olive oil

1 tsp dried thyme

Salt and pepper to taste

2 cloves garlic, minced

1/4 cup chopped fresh Thai basil

Heat the olive oil in a large skillet or sauté pan over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant, then add the chicken and season with salt, pepper, and thyme.
