Ingredients

2 cups farm-fresh eggs

1 lb nitrate-free sausage

1 cup shredded sharp cheddar cheese

6 large tortillas

1 medium onion, diced

1 medium bell pepper, diced

Crockpot or slow cooker

Cooking spray

Salt and pepper, to taste
