Easy Cottage Cheese Alfredo Pasta

Ingredients
pasta of your choice
cottage cheese
grated Parmesan cheese
unsalted butter
all-purpose flour
nutmeg
garlic powder
salt
Directions

Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and then drain.

Melt butter in a saucepan over medium heat. Add flour and whisk to combine. Cook for 1-2 minutes or until lightly toasted.

Slowly pour in cottage cheese, whisking continuously to avoid lumps. Bring mixture to a simmer and cook for 5 minutes or until fully incorporated.

Stir in Parmesan cheese, nutmeg, garlic powder, and salt. Cook for an additional 2-3 minutes or until cheese is fully melted and sauce is smooth. If desired, add some reserved pasta water to achieve desired consistency.

Combine cooked pasta and Alfredo sauce in a large serving dish. Toss to coat pasta evenly, adding more pasta water if needed. Serve immediately, garnished with additional Parmesan cheese if desired.
