★★★★★ (55 Reviews)
Ingredients
12 oz pasta of your choice
1 lb fresh asparagus, trimmed
1 cup fresh peas (or 1 cup frozen, thawed)
2 cloves garlic, minced
1/4 cup white wine (optional)
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
2 tbsp olive oil
Salt and pepper, to taste
Directions
1
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2
In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and cook for 3-4 minutes or until slightly tender.
3
Add the garlic, white wine (if using), and peas to the skillet. Cook for an additional 2-3 minutes or until the peas are tender.
4
Add the cooked pasta, parmesan cheese, and a pinch of salt and pepper to the skillet. Toss to combine, adding some reserved pasta water if the mixture seems dry.
5
Transfer the pasta mixture to a serving dish, garnish with parsley, and serve immediately.
