High Protein Greek Beef Meatballs
★★★★★ (55 Reviews)
Ingredients
1 lb Ground Beef (80% lean)
1/2 cup Greek Yogurt
1/4 cup Grated Parmesan Cheese
2 cloves Garlic, minced
1 tablespoon Olive Oil
1 teaspoon Dried Oregano
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 cup Mixed Spinach and Feta Cheese, chopped (optional)
Directions
1
Preheat the oven to 400°F (200°C). In a large bowl, combine the ground beef, Greek yogurt, Parmesan cheese, garlic, olive oil, oregano, salt, and black pepper. Mix well with your hands or a wooden spoon until just combined.
2
Using your hands, shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. You should end up with around 20-25 meatballs.
3
Place the meatballs on a baking sheet lined with parchment paper, leaving some space between each meatball. Bake for 15-20 minutes, or until cooked through.
4
While the meatballs are baking, cook the spinach and feta cheese in a pan with a little bit of olive oil until wilted.
5
Once the meatballs are done, serve them with the wilted spinach and feta cheese on top. Enjoy!
