  • With minimal prep time and a short cooking time making it perfect for busy weeknight meals.
  • The mixture of red wine and beef broth deepens the flavors and adds a complexity to the dish.

Yield:
4 Servings

Ingredients

4 pounds short ribs

2 cups of flour

4 tablespoons of butter

2 medium onions

2 large carrots

1 cup of cooking oil

2 tablespoons of tomato paste

1 cup of red wine

1 cup of broth

Pastry dough

Directions

1
Preheat your oven to 300° F. Season the short ribs with salt and pepper, and then brown them in a skillet on all sides.

2
In a separate saucepan, combine the flour, butter, onion, carrots, cooking oil, tomato paste, red wine, and broth. Bring to a boil over high heat, scraping the bottom of the pan with a wooden spoon to release any browned bits.

3
Transfer the browned short ribs to a baking dish and cover with the saucepan’s contents. Bake in the preheated oven for 25 minutes or until the meat is tender and easily falls apart.

4
Prepare a puff pastry well with flour and knead to make it pliable. Roll it out and cut it into 4 squares, enough to cover each short rib.

5
Use a pastry brush to apply an egg wash over the pastry before covering each short rib and use a fork to crimp the edges. Brush the tops with the remaining egg wash and bake in the oven at 375° F for an additional 15-20 minutes or until golden brown.

Storage & Reheating

Allow the French baked short ribs to cool to room temperature and then refrigerate for up to 3 days before reheating in the oven or microwave.
