Lemon Chicken Orzo Soup With Bright Cozy Broth

Ingredients
1 lb boneless, skinless chicken breast or thighs
4 cups chicken broth
2 cups water
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
8 oz orzo pasta
2 lemons, peeled and chopped
2 tbsp olive oil

In a large stockpot over medium-high heat, sauté the chicken and chopped lemons in olive oil until the chicken is golden brown.

Add the chicken broth, water, thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then add the orzo pasta.

Reduce the heat to low and let the soup simmer for 20 minutes or until the pasta is tender.

Stir in 2 tbsp of freshly squeezed lemon juice and cook for an additional 5 minutes.

Serve hot, garnished with a sprinkle of lemon zest and some chopped fresh parsley.
