Mediterranean Quinoa Bowl With Fresh Veggies And Feta

Ingredients
1 cup Quinoa, rinsed and drained
2 tablespoons Olive oil
1 red onion, thinly sliced
2 cloves Garlic, minced
1 red bell pepper, seeded and sliced
1 cup Cherry tomatoes, halved
1/4 cup chopped fresh parsley
1/4 cup crumbled Feta cheese
Salt and pepper to taste

Cook quinoa according to package instructions.

In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until the onion is lightly browned, about 5 minutes.

Add the red bell pepper and cherry tomatoes to the skillet and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.

To assemble the bowls, divide the cooked quinoa among four bowls. Top with the vegetable mixture, parsley, and crumbled feta cheese.
