MEDITERRANEAN SPINACH QUESADILLAS – Healthy & Nutritious

Ingredients
Fresh Spinach (1 package)
Feta Cheese (1 cup, crumbled)
Red Onion (1/4 cup, finely chopped)
Garlic (2 cloves, minced)
Kalamata Olives, pitted (1/4 cup, chopped)
Red Pepper Flakes (1 tsp)
Fresh Oregano (2 tbsp)
Whole Wheat Tortillas (4)
Cheese (1 cup, shredded)
Leone Olive Oil (1 tsp)
Directions

In a large skillet, heat 1 tsp olive oil over medium heat. Add red onion and cook for 3-4 minutes, until softened.

Add minced garlic and cook for 1 minute, until fragrant.

Stir in chopped olives, spinach, and red pepper flakes. Cook until spinach has wilted.

Place a large tortilla on a clean surface and sprinkle with feta cheese and fresh oregano. Top with a portion of the spinach mixture.

Multiply the tortillas, cheese, and spinach mixture for a total of 4 quesadillas. Fold each in half and pan-fry until cheese melts and tortillas crisp.
