MEXICAN STREET CORN SALAD – Easy Comfort Food


The smell of grilled corn wafting through the streets of Mexico City is a sensory delight that immediately transports me to the vibrant culture of this beautiful country. As a child, I would follow the vendors through the crowded markets, watching in awe as they transformed the humble corn cob into a work of art, drenched in a combination of mayonnaise, cotija cheese, chili powder, and lime juice. To this day, I remain enchanted by the flavors of Mexican street corn, and my version of the classic dish has evolved into a hearty Mexican Street Corn Salad that combines all the familiar flavors with the ease of a simple cold salad. MEXICAN STREET CORN SALAD – Easy Comfort Food

Ingredients

1 cup Frozen Corn Kernels
1 cup diced Red Bell Pepper
1 cup diced Yellow Onions
1 cup diced Canned Black Beans, rinsed
2 tablespoons Mayonnaise
2 tablespoons chopped fresh Cilantro
2 tablespoons juice from a Lime
1 teaspoon Ground Cumin
1/2 teaspoon Smoked Paprika
1/2 teaspoon Salt

Directions

In a blender or food processor, puree the mayonnaise, lime juice, cumin, smoked paprika, and salt until smooth.

In a large serving bowl, mix together the corn kernels, red bell pepper, yellow onions, black beans, and chopped cilantro.

Pour the mayonnaise mixture over the salad and stir gently until everything is well coated.

Season with extra salt and pepper, if needed.

Refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
