Key Ingredients

When it comes to making authentic French croissants, the quality of your ingredients matters. For the best results, use high-quality all-purpose flour that contains a high protein content, such as King Arthur Flour or Caputo Flour. Cold unsalted butter is essential for creating a flaky texture, so make sure to use the good stuff. Granulated sugar adds a touch of sweetness, but be careful not to overdo it, as it can make the croissants too sweet.
For the best flavor, use real lemon zest and lavender extract. Fresh eggs are also a must, as they provide moisture and richness to the dough. Finally, make sure to use active dry yeast that’s fresh and potent to help the dough rise.

Yield:
4 Servings

Ingredients

2 cups all-purpose flour

1/2 cup cold unsalted butter, cubed

1 tsp granulated sugar

2 large eggs

1 tsp lemon zest

1/4 tsp lavender extract

1/4 tsp salt

1 cup whole milk

1 tsp active dry yeast

Directions

1
In a large mixing bowl, combine the flour, sugar, and yeast. Whisk to combine.

2
Add the cold unsalted butter and use a pastry blender or your fingers to work it into the flour mixture until it resembles coarse crumbs.

3
In a separate bowl, whisk together the eggs, lemon zest, lavender extract, and salt. Add the wet ingredients to the dry ingredients and mix until a shaggy dough forms.

4
Knead the dough for 10 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover it with plastic wrap, and refrigerate for at least 2 hours or overnight.

5
Roll out the dough to a thickness of about 1/4 inch. Use a pastry brush to apply a beaten egg to the dough, leaving a 1-inch border around the edges. Sprinkle with granulated sugar and fold the dough in half lengthwise, then fold it in half again to create a triangle. Cut the dough into triangles and roll each triangle into a croissant shape. Place the croissants on a parchment-lined baking sheet and bake in a preheated oven at 400°F for 20-25 minutes, or until golden brown.

Storage & Reheating

For the best flavor and texture, store the croissants in an airtight container at room temperature for up to 2 days. To reheat, place the croissant on a baking sheet and bake in a preheated oven at 350°F for 5-7 minutes, or until warm and flaky.
