Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1.
In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt, pepper, and thyme. Add the chicken to the skillet and cook for 5-7 minutes per side, or until cooked through.

2.
In a separate saucepan, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

3.
Pour in the heavy cream and bring the mixture to a simmer. Let cook for 2-3 minutes, or until the sauce has thickened slightly. Stir in the shredded cheddar cheese until melted and smooth.

4.
To serve, place a cooked chicken breast on a plate and spoon the smothered sauce over the top.

Storage Tip: Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
