Simple Slow Cooker Shepherds Pie

Ingredients
1 pound ground beef
1 onion, diced
3 cloves garlic, minced
1 cup frozen peas and carrots
1 cup beef broth
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
2 cups mashed potatoes
Directions

Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks.

Once the beef is cooked, add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

Stir in the frozen peas and carrots, beef broth, tomato paste, dried thyme, salt, and black pepper. Bring the mixture to a boil, then cover and transfer it to the slow cooker.

Top the slow cooker with butter and stir until melted. Then spread the mashed potatoes evenly over the top.

Cook the mixture on low for 4-5 hours or high for 2-3 hours. Serve hot, garnished with fresh thyme if desired.
