Ingredients

2 cups chicken broth
2 cups water
1 medium onion, diced
2 cloves garlic, minced
1 large carrot, peeled and diced
1 large celery stalk, diced
1 teaspoon dried parsley
1 teaspoon dried dill weed
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
2 large eggs
1/4 cup matzo meal
2 tablespoons finely chopped fresh parsley

In a medium bowl, whisk together eggs, matzo meal, salt, and pepper.

Heat 1 tablespoon of oil in a large skillet over medium heat. Using a spoon, drop the egg mixture into the skillet, making sure not to overcrowd. Cook for about 5 minutes on each side, until the matzo balls are golden brown.

In a large stockpot, combine the chicken broth, water, diced onion, minced garlic, diced carrot, and diced celery. Bring to a boil over high heat, then reduce the heat to low and simmer for 5 minutes.
