Ingredients

1 lb Ground Beef
1 Onion
2 Cloves Garlic
1 Red Bell Pepper
2 Cans Diced Tomatoes
1 Can Black Beans, Drained and Rinsed
1 C Cup Corn
1 Packet Taco Seasoning
1 Cup Tostada Corn Chips, Crushed

Directions

Brown the ground beef over medium heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes. Drain excess fat, then stir in the taco seasoning and cook for 1-2 minutes.

In a separate pan, heat the oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are soft and fragrant.

Add the diced tomatoes, black beans, corn, and cooked ground beef to the vegetable mixture. Stir to combine and bring to a simmer.

Pour the mixture into a 9×13 inch baking dish. Sprinkle the crushed corn chips evenly over the top, followed by the shredded cheese.

Bake in a preheated oven at 375°F for 25 minutes or until the cheese is melted and bubbly.
