Ingredients

1 lb boneless, skinless chicken breasts
1/2 cup olive oil
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
1/4 tsp cayenne pepper
1 cup cooked white rice
1 cup black beans, drained and rinsed
1 cup diced tomatoes
1 avocado, diced
1 cup shredded lettuce
1 cup diced red cabbage

Directions

Slice the chicken breasts into thin strips and season with cumin, chili powder, paprika, and cayenne pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes.

In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the garlic and cook for 1-2 minutes until fragrant. Add the cooked white rice and stir to combine with the garlic and oil. Cook for an additional 2-3 minutes until the rice is heated through.
