Ingredients

1 lb boneless, skinless chicken breasts
2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 cups cooked brown rice
1 can black beans, drained and rinsed
1 tsp cumin
1 tsp chili powder

Directions

Cook the chicken in a large skillet over medium-high heat until browned and cooked through, about 5-6 minutes per side. Transfer the chicken to a plate and cover with foil to keep warm.

In the same skillet, add the olive oil and sauté the onion, garlic, and red bell pepper until the vegetables are tender, about 5 minutes.

Add the cooked brown rice, black beans, cumin, and chili powder to the skillet and stir to combine.
