The Chicken Burrito Bowl Everyone Is Saving Right Now

Ingredients
1 lb Boneless, Skinless Chicken Breast
1/2 cup Fajita-Style Seasoning
1 can (14.5 oz) Diced Tomatoes
1 cup Uncooked White Rice
2 large Onions
2 large Bell Peppers
1 pack (16 oz) Mexican Shredded Cheese
1 can (16 oz) Black Beans, Drained and Rinsed
2 tbsp Olive Oil
Salt and Pepper, to taste
Chopped Fresh Cilantro, for garnish

Rinse the chicken breast and coat with fajita-style seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side or until cooked through, then set aside and let rest.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add diced onions and bell peppers and cook until tender, about 5 minutes. Add diced tomatoes and cook for an additional 2 minutes.

In a medium saucepan, add 2 cups of water and bring to a boil. Add the uncooked white rice, reduce heat to low, cover and simmer for 15-20 minutes or until cooked through.

Warm the black beans according to package instructions and shred the cheese.

Assemble the burrito bowls by placing cooked rice on the bottom, followed by a slice of chicken, then toppings from the skillet, black beans, and cheese. Garnish with chopped cilantro and serve immediately.
