The Chicken Burrito Bowl Everyone Is Saving Right Now

Ingredients
1 lb boneless, skinless chicken breasts
1/2 cup lime juice
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp cumin
1/4 tsp cayenne pepper
8 oz cooked white rice
1 cup frozen corn kernels
1 cup shredded cheddar cheese
8 small flour tortillas
Optional toppings: diced tomatoes, shredded lettuce, diced avocado, sour cream
Directions

Season the chicken breasts with oregano, cumin, and cayenne pepper. Grill or cook in a skillet until cooked through, about 5-7 minutes per side.

Shred the cooked chicken into bite-sized pieces and set aside.

In a medium bowl, whisk together lime juice and 1 tablespoon water. Add the cooked corn kernels and let sit for about 5 minutes, until slightly softened.
