Ingredients

1 lb boneless, skinless chicken breasts
2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 cups cooked white rice
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1 can black beans, drained and rinsed
1 cup shredded cheese (Monterey Jack or Cheddar work well)

Directions
