Ingredients

1 1/2 pounds boneless, skinless chicken breasts
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces Mexican rice
1 can diced tomatoes with green chilies
1 avocado, diced

Directions

In a large bowl, whisk together olive oil, garlic, cumin, paprika, salt, and black pepper. Add chicken breasts and toss to coat. Grill or bake for 20-25 minutes, or until the chicken is cooked through and slightly charred.

Cook Mexican rice according to package instructions. Fluff with a fork and set aside.

In a separate pan, warm diced tomatoes with green chilies over medium heat.
