Ingredients

1 lb boneless, skinless chicken breasts
1/2 cup chopped fresh cilantro
1 cup cooked white rice
1 can black beans, drained and rinsed
1 red bell pepper, diced
1 small red onion, diced
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika

Directions

Mash 1/2 cup chopped cilantro and mix it with lime juice, cumin, chili powder, and paprika. Set aside.
