Ingredients

1 lb boneless, skinless chicken breasts
1/4 cup olive oil
2 cloves garlic, minced
1 cup brown rice
2 cups mixed frozen vegetables (such as corn, peas, and carrots)
1 can black beans, drained and rinsed
1 can diced tomatoes, drained
1 tablespoon cumin
1 teaspoon chili powder
1/4 cup shredded cheese (such as cheddar or Monterey Jack)

Directions

Preheat your oven to 400°F (200°C). Season the chicken with cumin, chili powder, and salt, and bake for 15-20 minutes, or until cooked through.
