The Chicken Burrito Bowl Everyone Is Saving Right Now

Ingredients
1 & 1/2 pounds boneless, skinless chicken breasts
1 cup uncooked white rice
2 cups water
1/2 cup freshly chopped cilantro
1/2 medium onion, diced
1 jalapeño pepper, diced
1 can (14.5 oz) diced tomatoes
2 teaspoons ground cumin
1 teaspoon smoked paprika (optional)
Directions

In a medium saucepan, bring the rice and water to a boil. Reduce the heat to low, cover, and cook until the rice is tender, about 15-20 minutes.

Cook the chicken in a large skillet over medium-high heat until browned, about 5-6 minutes per side. Transfer the chicken to a plate and set aside.

In the same skillet, add the diced onion, jalapeño, and cilantro. Cook until the onion is translucent, about 3-4 minutes.

Add the cumin, smoked paprika (if using), and diced tomatoes to the skillet. Cook for 1-2 minutes, stirring constantly.
