The Chicken Dinner People Repeat For Fast Protein

Ingredients

1 lb chicken breast or thighs
2 cups uncooked white rice
2 cups chicken broth
1/4 cup unsalted butter, melted
Salt and Pepper, to taste
Optional: 1 teaspoon paprika and 1 teaspoon dried thyme
1 lemon, sliced (for serving)
Fresh parsley, chopped (optional)
Non-stick cooking spray or parchment paper

Directions

Mix the rice and chicken broth in a large bowl until well combined. Season the rice mixture with salt and pepper, and then set it aside for later.

Preheat your oven to 375°F (190°C). Arrange the chicken and rice mixture evenly on a baking dish. Brush the melted butter over the top, adding optional paprika and thyme if you wish.

Non-stick spray a 9×13 inch baking dish and arrange 4 slices of lemon on the bottom. Layer 2 chicken pieces, half of the rice mixture, and 2 slices of lemon. Repeat layers one more time and add the last of the chicken on top. If you’re using a glass baking dish, you can cover it with aluminum foil.

Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Remove the baking dish from the oven, and you’ll be ready to serve.
