★★★★★ (55 Reviews)
Ingredients
1 and 3/4 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 cup plain Greek yogurt
1 cup fresh or frozen blueberries
1 cup white chocolate chips
Directions
1
Preheat your oven to 350°F (180°C). Line a 12-cup muffin tin with cupcake liners.
2
In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
3
In a large bowl, using an electric mixer, beat the butter until creamy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
4
Add the flour mixture to the wet ingredients and mix until just combined. Do not overmix.
5
Spoon the batter into the prepared muffin cups, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely in the pan.
