YOGURT BANANA MUFFINS – Healthy & Nutritious

Ingredients

Bananas (3)
Unsalted Butter (1/2 cup)
Sugar (3/4 cup)
Plain Greek Yogurt (1 cup)
Large Eggs (2)
Vanilla Extract (1 tsp)
All-purpose Flour (1 1/2 cups)
Baking Powder (1 tsp)

Directions

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, and baking powder.

In another bowl, whisk together the butter, eggs, yogurt, vanilla extract, and mashed bananas.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
