Zucchini Quinoa Fritters With A Golden Savory Finish

Ingredients
2 cups cooked quinoa
1 medium zucchini grated
1/4 cup grated Parmesan cheese
1 small onion finely chopped
1 clove garlic minced
1 egg lightly beaten
1 teaspoon dried oregano
1/4 teaspoon black pepper
2 tablespoons olive oil
Golden finish ingredients (such as butter, breadcrumbs, or cheese)

Preheat oil in a deep frying pan to 375°F (190°C). In a separate bowl, combine the grated zucchini, Parmesan cheese, onion, garlic, egg, oregano, black pepper, olive oil, and a few drops of water. Stir until the mixture holds together and is fairly moist.

Combine the moistened quinoa from earlier with the mixture made in step 1. Fold gently to combine, taking care not to overmix. Season the mixture with additional salt to taste.

Using a tablespoon or a small ice cream scoop, portion the quinoa mixture into 8 to 10 patties. Place the patties in the hot oil and fry for 4 minutes per side or until the fritters are golden brown, puffed and firm.

Gather a small saucepan, add butter, breadcrumbs or cheese as your golden savory finish, heat this on the skillet, then use a brush or spoon to coat both sides of each fritter with your choice of golden savory finish.
