Easy Beef Zucchini Sweet Potato Skillet

Ingredients

1 lb Ground Beef
2 medium Sweet Potatoes
1 medium Zucchini
1/4 cup Onion, diced
2 cloves Garlic, minced
1 tablespoon Olive oil
1 teaspoon Dried oregano
Salt and pepper, to taste

Directions

In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes.

Once the onion is softened, add the garlic and cook for an additional minute, until fragrant.

Add the ground beef to the skillet, breaking it up with a spoon or spatula as it cooks.

While the beef is cooking, peel and dice the sweet potatoes into 1-inch cubes and chop the zucchini into 1-inch pieces.

Pile the sweet potatoes and zucchini on top of the beef, season with salt, pepper and dried oregano to taste, and continue cooking for an additional 15-20 minutes, or until the vegetables are tender and the beef is cooked through.
